I'm wondering if they taste or cook differently when using different nut flours. Also, if I recall, on digestive wellness I only saw pecan MEAL, not flour. Can I still use that? Is it coarse or fine? Guest guest Posted June 26, 2009 Report Share Posted June 26, 2009 You can swap flours. They'll taste differently, I'm not sure if they will bake differently though. I should know that. Ah well. But yes, they have different qualities. I like to use pecans in dessert dishes and almond flour in more cracker type dishes. Walnuts have a more bitter taste but they can also add a buttery flavour. I have a great recipe that uses them to make a raw version of hostess cupcakes. I don't think they actually taste that way but they're good none the less. I haven't yet figured out the best way to use hazelnut flour because it tastes a lot more potent to me than others though I think it could add to a chocolate-like flavour. My bf (not on SCD but inexplicably brilliant in the kitchen) has been experimenting with bean flours (that he makes himself). So far he's come up with quite an amazing couple of cracker recipes made from black bean flour (though of COURSE he didn't write the directions down). > > Can you switch out pecan and almond flour in recipes? I found plain almond flour too difficult to tolerate in the beginning and this combination tastes really good, so I've stuck with it.
