Guest guest Posted June 20, 2009 Report Share Posted June 20, 2009 Kim and all, this is an interesting discussion. All beans are polysaccharides? I didn't know that ... but of course, it makes sense. So I can't help but wonder why some beans are legal and others are not. Are there certain polysaccharides that are better or different than others? And if so, what is the determining factor that Elaine used to allow some legumes and disallow the rest? By the way, I made hummus out of lentils the other day and it was very yummy. Hannah Undiagnosed IBS SCD 08/08 All legumes are polysaccharides, but Elaine felt a few were better tolerated if cooked correctly and included them in the list of permitted foods.
