I'm not a bean eater -- or rather my digestion refuses to cope with dried beans -- so I haven't looked into the legal types beyond navy beans and lentils. All legumes are polysaccharides, but Elaine felt a few were better tolerated if cooked correctly and included them in the list of permitted foods. But that is still no guarantee that all of us will tolerate them. Kim M.
