ZUCCHINI MUFFINS Serving Size : 12 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup whole wheat flour 1 cup oat bran 1 tablespoon baking powder 2 teaspoons cinnamon 2 packets splenda 1/3 cup brown sugar 1/2 cup applesauce, unsweetened 1/2 cup Egg BeatersĀ® 99% egg substitute 1 teaspoon vanilla 1/3 cup raisins 2 cups zucchini -- shredded mix dry ingredients togeather in bowl then add wet and mix to moisten place equal amounts in muffin tins sprayed with butter flavored spray bake 350 about 20 mins. can sprinkle lightly with rolled oats on top before baking. 1 point each - - - - - - - - - - - - - - - - - - - Per Serving (excluding unknown items): 94 Calories; 1g Fat (6.5% calories from fat); 4g Protein; 22g Carbohydrate; 3g Dietary Fiber; 0mg Cholesterol; 140mg Sodium.
