I understand that cheddar and swiss may be used freely but are all cheeses that have been aged for over 60 days lactose free? I have seen a lot of cheese that has been aged for well over two months and I would love to give it a try. I'm pretty sure anything over 30 days is legal, so you should be fine with 2 months. Enjoy! I think the list of cheeses is available on line and in BTVS. Some kinds are not

legal.

This list is soooooooo beneficial to me. I truly appreciate the

time and energy you invested in obtaining all this info.
