coconuts for old timers

I would like to have more info on this whole coconut thing.

Apparently young coconuts which is the most readily available coconut water in

the US market is from young coconuts and not from brown coconuts.

The young ones from what I understand are illegal since the sugars haven't

totally converted.

This perplexes me as young coocnuts and brown coconuts aren't even the same

species. Someone said the botanical designation of a coconut is a seed. Not

sure which coconut they are referring to. Are all coconuts seeds?

How do you know young coconuts are such a problem? Is there a way to age a

young coconut?

If this is the case how do we know the type of coconut product we are buying be

it coconut flakes or coconut oil? I reckon the oil is different since it is the

fat- but you get my drift.

Fresh coconut water has loads of potassium in it. I cannot supplement

potassium. I cannot eat many banana's. I have a sodium/potassium imbalance

since my surgery and I would like to figure this out.

Is there any literature of Elaine talking about coconuts?

my 81 yr old Dad was visiting me and after years of fighting high cholesterol, he gave me a reluctant, dubious 'OK' when I told him I was cooking his food in coconut oil this weekend. I have only recently started using it in small amounts in place of other fats. I sent him this link to read.

Are you able to eat dried apricots? I think they are a good source of potassium. Nuts are also high in potassium.

You're right Marilyn..

But, they over loaded me with fluids in the hospital because I had very low

blood pressure post surgery- this was due to teh Epidural catheter. I cannot

take a potassium supplement.

I see how my stamina has changed post surgery.

Do you feel like yourself now? How long has it been sicne your surgery?
