About 4c. macaroni - I like Barilla's whole grain,Himself likes the old-time " giant " kind 1/2 stick or so of good butter 1/2 cup milk 2-3 Tablespoons dry minced onion 1-2 slices bacon, fried crisp and crumbled (optional) abt 1/4 of a block of Velveeta (I know, but it makes a good smooth base!) cubed abt 1/4 of a BIG block of Cabot's Extra Sharp White Cheddar (or your fave) 3-4 Tablespoons crumbled feta cheese (or blue?) a couple of " shots " of a good red hot sauce - I like Cholula (use caution!) salt, pepper, and a tiny bit of garlic to taste I do the sauce in the microwave - in a 1-qt measuring cup. First nuke the butter, milk, and onion til melted. Then put in 1/2 the Velveeta, the other cheeses, the other 1/2 of Velveeta, and a little bit of hot sauce. Nuke at a low temp until the cheeses are completely melted - in my microwave, this takes about 9 minutes at " 3 " . While this is happening, cook your macaroni by your fave method. When the cheese sauce is all nice and melty, season to taste with salt, pepper, hot sauce, and garlic. Stir in bacon crumbles (if used). Stir sauce into cooked, drained macaroni. Add more butter or milk if needed (or a spoon or two of cream/sour cream!) to be as creamy as you like it. Turn into a lidded oven dish. Bake at 400 for 20 minutes, or microwave until hot and bubbly. So here is one in return~Pollo Fundido2-3 cups shredded chicken1-2 tsp mex spices1 can diced green chili's1-2 tsp ground jalapenos *mix all together and warm1 pkg flour tortillas *warm slightly one by one to make pliable and roll into a egg-roll size burrito with ends closed and lay seam side down in a lightly oiled baking dish *repeat until baking dish is completely full1 pkg of regular or light sour cream (not fat free) *spread in thick layer over chicken burrito rolls1# sharp or extra sharp cheddar cheese grated *sprinkle a nice layer covering sour cream completely1/4 cup diced green onion tops1/4 cup diced or sliced olives *sprinkle lightly over cheeseBake at 350 until cheese is melted real well but not toasted/browned. 1/4 cup diced tomatos without seeds and drained on paper towel a bit *sprinkle on casserole right as it comes out of oven. And I find I like feta in almost everything that's " cheesy " - a little extra kick! Since I don't often find affordable maters here I mix in a can of them before baking, sometimes some tuna, or corn, or peas...depends on what I have...oh, and Robbin;s favorite, cubed ham or spam...with some of the above... Guest guest Posted May 9, 2011 Report Share Posted May 9, 2011 Here's two cents from a REAL mac-n-ceese amateur...I have never had homemade mc-n-cheese, but have had the kind of mac-n-cheese you can buy (from the foreign food shelf, in some stores) ready made, a few times. The ready-made one was perfectly fine, as far as ready made meals go. Will never forget the first time we bought/made it though. We had never even seen it before, and that strong orange color was really not part of what we had expected. We weren't quite sure it was supposed to look like that, or if some employe in the factory had accidentally dropped a bucket of paint in that batch... But I understand the color has to do with the choice of cheese. And it was OK. I have read a recipe for a homemade one though, that I'll like to try some time. It has cheddar, some other cheese I can't remember the name of and probably won't find (I am guessing it's the orange one...), and gorgonzola. I think the gorgonzola will really make it interesting. The gorgonzola could most likely be replaced with feta (I love feta cheese too!). I think it's to add to the impression of " cheez " . Mercy on us, my son used to eat that stuff by the boxful.... You should try out your recipe! There is a world of difference between the " kit " and the real thing!
