You can make your own vanilla extract. I am doing this and it’s

easy. It does have to “age” for 2 months (or 4 months for a

stronger product). You could start a batch or 2 for the future. Here is the

recipe (from Everyday Grain Free Gourmet I think):

Vanilla Extract

12 vanilla beans

3 cups vodka

Carefully slice the beans lengthwise to expose the tiny seeds

inside (I use scissors and carefully cut along one edge and then pull the bean pod

open with my fingers)

Drop the sliced vanilla beans into the vodka, making sure the

vodka covers the full height of the beans

Give the bottle a good shake and store in a cool, dark place for

6-8 weeks

Give the bottle a shake a few times a week to distribute seeds

After 6-8 weeks pour out 1 cup of the extract into another

container and set aside for baking use

Top off the big bottle with 1 cup vodka, add 4 more sliced

vanilla beans and store for another 6-8 weeks. This step of pouring off and

topping up can be repeated again and again, as long as you add more vanilla

beans and let the mixture sit for the required time.

Note: for the jar I had I used 4 cups vodka and 16 vanilla beans

to start.

on Elaine's website, but it doesn't work for me. The toll free number on my

bottle is . I get it at Dean and Deluca in New York--not sure if

they ship it or not. It is called Double Intensity Pure Veracruz Vanilla

Extract. Very delicious. Also very expensive: $20.00 for 100 ml.
