You can get a really nifty apple peeler/corer machine at most kitchen shops. I've been using the same peeler/corer for 6 years, making a batch of applesauce once a week, and no sign of it breaking anytime soon. Really speeds up the process of peeling and coring.

Mine was a gift, but it was found at a local kitchen shop, and I know you can find it online. Doesn't seem too expensive to me when it lasts for years and makes the job so much easier. Here are a couple of sources, but there are plenty of others:
