Guest guest Posted July 8, 2012 Report Share Posted July 8, 2012 Diabetic - Open-Faced Garden Ranch Tuna Salad Sandwiches 2 cans (5 ounces each) chunk white tuna in water, drained 2 tablespoons light ranch dressing 1/4 cup peeled, diced cucumber 1/4 cup diced celery 1/4 cup diced carrot 1 small tomato, cut into 8 thin slices 2 toasted whole wheat English muffins, split 2 teaspoons fresh chopped dill 1. Combine tuna, dressing, cucumber, celery and carrot in medium bowl. 2. Place 2 tomato slices on each English muffin half. Top each evenly with tuna mixture and dill.
