And if you wanted a sweeter version, you could add some honey or artifical sweetener to the vinegrette and use ider vinegar instead of white or wine vinegars. Instead of Baked beans? I understand that baked beans are not recommended for diabetics. But what about refried beans or anything else along those lines? I suppose one could use Splenda or Stevia to make the baked beans taste the requisite sweetness. Maple syrup or molassis are often used to flavor the beans. I'm not so sure we can't eat baked beans, it's just there are better beans. I'm not sure which ones are best, but the key is to look for the highest amount of fiber. Beans can be high in carbohydrates, so the higher fiber content needs to be evaluated in comparison to the grams of carbohydrates.
