tells how to prepare a horseradish mix.

This is very quickly adapted from a cook book. I haven't made it. It

looks pretty spicy.

1/2 tsp. honey

3/4 cup plain SCD yogurt (dripped)

3/4 cup mayonnaise 2 tbsp. lemon juice 1 tbsp. Dijon mustard or Creole

1/2 tsp. ground red pepper 3 tbsp. grated, fresh horseradish

Here is another one, again hastily adapted, but I've done a similar one

from scratch, which should be somewhat less spicy:

3 Tbsp prepared horseradish (use the first recipe)

1/4 cup dripped or drained half & half SCD yogurt

1 teaspoon Creole or Dijon mustard 1 Tbsp mayonnaise 1 Tbsp chopped chives or the greens of a green onion

When I've made this, I usually use about half a cup of yogurt cheese and

a quarter cup of mayo. I suspect you could also use the proportions in

the second recipe and omit the red pepper, or maybe replace it with

paprika.

And then, of course, there's my Remoulade Sauce.

I love it grated fine and mixed with some full-cream yoghurt.

Beware that fresh horseradish is very powerful, and when you grate it,

don't stick your face right over the bowl. Been there, done that

and ended up passed out on the floor. No kidding ...
