Originally I was going to make a watermelon curry (it's a recipe from one of our Indian cookbooks, and is superb when it's hot outside, according to our cookbook the dish stems from the part of India where summer temps are over 100 F). But I didn't find a watermelon that wasn't ridiculously large, so I gave up on that, and figured I good make a nice zucchini risotto, with lemon juice instead of white wine. And some basil too (basil goes very well with the lemon variety of risotto, in my opinion).But then I found that we didn't have any basil, and I just did not want to interrupt cooking and go back to the grocery store, so I figured I'll find some replacement for basil as I go along.As I was stirring the risotto I suddenly felt the need to spice it up, so I added curry powder, some extra turmeric for extra yellow color, cayenne pepper. And then as I was stirring in some more of the lemon juice, I thought that some mango would lift the fruitiness of the lemon juice quite good (my mind was probably still on that cancelled watermelon curry...), and we did have chopped up mango in the freezer, so I threw in some.In the end, I had a zucchini-risotto-mango-curry.... tasted splendid actually...love/Reb Quote Link to comment Share on other sites More sharing options...
