Thanks Arne,

We make something very similar, and it's on the menu for Christmas and

birthdays only. My kids never used to like potatoes till I made them like

this, so we keep them as a special treat! If you add lots to the filling (we

add sweet corn either creamed or kernels as well),it never refits back into

the potato, but is very edible reheated in the microwave!

It's sort of like refried beans :) I'm sure Barb has a more

authentic recipe (than a Norwegian)!
