I have found that since being on SCD (over 5 years now) I had to change my eating habits in order to keep from going hypoglycemic and to maintain energy levels. I routinely eat something every 2 to 3 hours. Makes sense as we aren't eating the complex carbs which take hours to digest; we have to refuel frequently for our body to maintain energy. I make normal sized meals, but then eat them in two or three parts. My digestion doesn't handle snacks in the traditional sense, so I just eat small meals that contain protein and vegetables, all cooked.

At two months on SCD you are going through the worst of detoxing, so things should improve. During this period, fall back to your version of the intro. diet for a few days, let your digestion have an easy time of it. Unless, of course, you are getting some hidden illegals.... It is normal to have ups and downs during the first year or two on SCD, during the healing process. But each episode gets a bit shorter, less severe -- and eventually your digestion calms down and works a lot better.

I have found I need to eat foods at certain times of day -- or another way of saying this is that my digestion is less functional at certain times of day. For me, mornings and after 4 pm. my digestion is barely functional. So I make sure I eat most of my daily food intake between 11:30 am and 4 pm. I do eat every 2 to 3 hours, but I eat the easier (softer, more liquid) foods before 11:30 am and after 4 pm. I stop eating at 8 pm. (and only eat a very small, light snack that late in the day) or I won't be sleeping. Yet I have learned I need to eat something then or I go into hypoglycemia at 2:30 am. Took me a while to figure what would work for my digestion and my metabolism.

I have found that variety is key for me to avoid building up a sensitivity to foods. Food sensitivities were a lot more severe during the first 2 years on SCD by the way, but then I was dealing with a systemic candida overgrowth and my gut ecology was deplorable. Things are a whole lot better now. But I do try to eat something different every day and not repeat for a day or two, depending on the food. I have to wait a week or two (or longer) before eating some foods again; some foods I've had to eliminate from my diet completely. If I get symptoms after a meal, then I start figuring out what the problem was. Sometimes it's the supplement or even a medication I am trying, sometimes a particular food. Sometimes I've picked up a hidden additive or illegal. Figuring these things out does get easier the longer you're on SCD....

......Since then I've been struggling with worsening fatigue and hypoglycaemia. I can eat a 3 steak meal and be starving seemingly within 2 hours. If I don't eat soon after I get really tired and irritable, this has always been a problem for me, but it seems to be increasing. I read it is supposed to even out after a while though?

......Is it normal to develop sensitivities to foods and have any other coeliacs found the same thing? I really wonder if something I am deficient in is causing me not to heal, but to become increasingly intolerant.
