I ordered mine online from King Arthur (http://www.kingarthurflour.com/shop/items/cocoa-butter-4-oz). I was unable to find it in my local health-food stores. I don't know what "stage" cocoa butter would be considered to be, but I am eating it now right after recovering from a flare and haven't noticed any issues at all with it. I would guess it's similar to coconut oil or any other oil or fat.
