It’s one of the easiest, quickest things you can make for the biggest taste payoff. Make a few servings at a time with just a couple of apples, or make more with a larger number of apples. It takes but a minute – literraly -- to peel an apple, core it, slice it, dump it in a pan, add a little water (and cinnamon – I add lots of cinnamon), cover it and turn on the stove. And it takes but a few more minutes to cook to the soft stage. Then use a hand blender to chop up the chunks and puree it, if you wish, or use a potato masher for slightly bigger chunks. Or don’t mash it up at all. And, as Emeril would say, “There you have it!” (Personally I use Empire apples because they have a superb ratio of tartness to sweetness and are very crisp when fresh. (If you peel a lot of apples, it’s worth getting a rotary (hand cranked) table top peeler. And buy a corer (even if you don’t peel a lot of apples). They work very well and waste less apple than cutting out the core with a knife.
