Apparently, it has been unfairly demonized via hydrogenization. Coconut oil is a medium chain fatty acid that can be digested easily. With compromised biliary and digestive functions, this could be a healthful option for UC and PSC sufferers who generally do not digest and absorb fats properly. In addition, canola oil is very high in Omega 6, which the modern diet is already overflowing in. And there is a belief now that Omega 6's are inflammatory, as opposed to anti-inflammatory like Omega 3s.
