Guest guest Posted April 25, 2008 Report Share Posted April 25, 2008 Naturally I forgot to add the recipe to my last e-mail! Most of you know me, if it’s easy, it’s right up my alley. Potatoes - bake how ever many you want Cut in half length wise and scoop out potato (leaving a small amount to hold shape) Mash potatoes adding: 1. Butter – as much or little as you want or use any other product of your choice 2. Sour Cream – a cup (don’t measure) or more (depending on # of potatoes), can use fat free or low fat 3. Salt & Pepper - to taste 4. Cheddar cheese – to taste That’s it. Don’t use milk, it will make potatoes too wet. Put potatoes back into shell, cover with more cheese and reheat. May also use bacon bits and/or onion (chives, green onions or any other kind.) If you don’t have the time, but still want them…… just peel potatoes, boil until done and mash as above, put into dish and reheat.
