Guest guest Posted May 28, 2009 Report Share Posted May 28, 2009 ....I'm curious weather fermented foods would be considered raw or cooked?? any listees know?? their fermented raw, but then become "cookish" in texture by the fermentation ...but are still somwhat crunchy ... I made a gallon of kimchee a couple weeks back with crucifers, onions, garlic & chilli's thats super tasty & i'm just curious as to whether it's raw or not? ( I tolerate it well, though I only have small servings as a condiment with meals as I know if I overload on bacteria it confuses my gut!)
