I saw this statement in an earlier post and wanted to clarify: why is it

necessary to chill the yogurt before dripping?

For the past 6 months or more, I have been dripping mine before I put it

in the refrigerator and it seems to work fine for me. I line a colander

with a flour-sack type dishtowel and let it drip at room temperature for

a few hours after completion of the 24 hour ferment cycle. Sometimes I

will even start dripping it and leave it on the heat (I do my yogurt

using the 60-watt light bulb in the oven since I make 1-1/2 gallons at a

time).

But that must mean that it also contains more galactose which is the reason

people drain it in the first place. Ron
