Guest guest Posted June 21, 2009 Report Share Posted June 21, 2009 Aiazeen, Here is my recipe for white bean hummus. It is to my taste, so feel free to tweak it to yours. It is a base hummus to which you can top with numerous things: chopped green or black olives or both together, float hot oil on top, or chop dried red chilies steeped in some EVOO and when macerated, put a small dollop on top of a serving; chopped or sliced scallions, chives, pesto. I dip baby carrots, cucumber rounds and red pepper slices in it. You can smear it on lettuce and have a roll-up. 2 C navy pea beans 1/4 C sesame tahini 2 small cloves of garlic Juice of 2 lemons 4 pinches of fine sea salt 2 pinches ground cumin 4 Tbls EVOO 1/4 C warm water Put everything in the bowl of the food processor except for the water. Process until smooth. Check taste and consistency, with machine running, add warm water until the puree is creamy. I like things spicy, so I add a pinch of cayenne or my homemade hot spice powder.
