Guest guest Posted March 4, 2011 Report Share Posted March 4, 2011 3 cups uncooked white beans (I like great northerns for this, but canellini would work) 2-3 carrots - a handful of small " coins " , the rest chopped small 2-3 stalks celery -a handful pretty slices, the rest chopped small 1 large onion (red is nice) chopped small (reserve a little) some green onions (optional) for garnish about 1 c. chopped tomato (optional) 2 tablespoons tomato paste water or veg broth for cooking the beans salt, pepper, garlic, a little lemon juice to taste Set 2 qts water to boil. Clean and rinse beans; when water is boiling, add beans, salt, pepper, a little garlic. When beans are about 1/2 done, add finely chopped veg - reserve the " pretty stuff " . When beans are almost done, add " pretty veg " - carrot coins, celery slices, tomato, etc - and turn to a simmer. When beans and all veg are done to taste, dip up about 1 cup of beans, mash to a paste, and stir back into pot. Stir in dash of lemon juice and tomato paste. Simmer for about 5 minutes. Taste and adjust seasonings. Serve hot with some crusty bread.
