Greek Chicken Wings

2 1/2 ponds chicken wings, trimmed and halved

4 tablespoons minced shallots

4 tablespoons minced garlic

1 cup extra-virgin olive oil

3 tablespoons dry oregano or chopped fresh rosemary

2 teaspoons kosher salt

1 teaspoon ground pepper

Zest of 1 lemon

1/2 cup fresh lemon juice

2 tablespoons red wine vinegar

2 tablespoons Dijon mustard

3 tablespoons honey

Blend together all ingredients, except wings. Place wings in a large bowl, and cover with sauce. Chill overnight.

Heat oven broiler. Broil wings on cookie sheet, stirring as needed, until browned and cooked through, about 15 to 20 minutes.

These wings are easy to make. You can make them the day before. They take 10 minutes to cook under the broiler.
