Bananas are relatively high-carb, though a lot of people tolerate them well. So are strawberries. If a fruit tastes really sweet it probably is higher carb than one that tastes less sweet. There are various types of SCD “legal†muffins you can make that use almond flour (finely ground blanched almonds) instead of wheat flour. I personally like the apple muffins in one of my SCD cookbooks, though I change it a bit. (It calls for homemade applesauce as well as two peeled, chopped apples. I use SCD yogurt instead of the applesauce. The recipe is: Apple Muffins (from Grain-Free Gourmet) 2 cups (500 mL) almond flour; ¼ tsp (1 mL) salt ½ tsp (2mL) baking soda 1 tsp (5 mL) cinnamon (I use 2 tsp; I love cinnamon!) 2 fairly tart apples, peeled and chopped 3 eggs ½ cup (125 mL) applesauce (I use ½ cup yogurt.) 1/3 cup (75 mL) honey (I cut that to ¼ cup). Heat oven to 325 F (160 C). Line a muffin tin with baking cups. Combine wet ingredients, dry ingredients, then mix them together. Fill the baking cups.
