Guest guest
--- On Thu, 7/9/09 you wroteQuick question about the soup. I've always made it with the rotisserie chix which I just found was illegal. For the SCD soup, do you fill the pot with RAW chicken parts or COOKED chicken parts? Pecanbread doesn't specify. You can make it with either. If I have roasted a chicken, I save all the bones and freeze. Then when I have sufficient quantities, I put all the bones in the water and make the soup. (It's even more tasty, if you roast those bones for about half and hour in oven first - then scrape up all the crispy bits and add them to the soup pot. When making stock from raw chicken, I usually use "bone-in" chicken pieces. After about 45 minutes of cooking, I fish out the pieces - remove the chicken meat and put away for some other use. The bones are returned to the soup pot for a long slow cook (the longer the better).Tip: Add a teaspoon of vinegar to the pot to help break down the calcium - especially if you are using extra thick bones (such as beef bones).Hope this helps.Vivien Messages in this topic (53) Reply (via web post) | Start a new topic Messages | Files | Photos | Links | Database | Polls | Members | Calendar Change settings via the Web (Yahoo! Guest guest
Alyssa- Lowes Foods carries on Farms Chicken which according to the website has nothing added. It goes on weekly special alot too, which is easier on the pocket book than Whole Foods. Buying chicken is tricky since sometimes broth and flavorings with illegal things in them are added during processing. Teeter carries Smart Chicken which is OK too, but it is almost never on weekly special there.
