Sugar Free holiday recipes?

I'm really wanting to make some treats for the holidays but they need

to be something hubby can have a little of. What are some recipes you

have tried and liked? somethings i'm looking for are...

cheese cake

fudge

also are they any stores that are more likely to ahve sugar free

stuff? Any help would be great!

April, one of the best recipes I've found have been on

www.splenda.com. If you intend on doing a lot of baking with Splenda,

it's best to buy the bulk packs at BJ's or Sam's. I've made delicious

cheesecakes just substituting Splenda for the sugar, and fat free

cream cheese. Also great success with pies doing the same. However,

remember to make sure pies are fully cooled to room temperature at

least (or refrigerated, if you prefer that) because they taste " off "

if eaten while still warm. They have a funky aftertaste from the

Splenda that seems to disappear when they're cooled. Acidic fruits

work best, like cranberry, rhubarb and tart cherry.

Fudge might be a little tougher, because real fudge texture depends on

the sugar being cooked to a certain temperature (soft ball stage, or

238 degrees fahrenheit) to give it the fudge-like consistency. There

might be a recipe for pseudo-fudge that could be made with sugar-free

pudding mix as a base and no cooking, but I've personally never seen one.

I think that there is a cheesecake recipe on the cream cheese wrapper and

you can definitely substitute splenda for the sugar that it calls for.

There is a recipe on bariatriceating.com for a sugar free no bake

pineapple cheesecake. I made it at Thanksgiving and have to say it is

the absolute BOMB!!! I used lowfat cream cheese w/ it as well.

April,

I made a pretty good cheese cake that was a splenda recipe. I even

adjusted it to get rid of some of the higher fat things like half/half

and other fats.

Please don't be grossed out but the idea of cooking it just seemed like

it would take too long so I had a little bit each evening for a week.

It was sort of like a cheesecake bisque. There that makes it sound

French and not so sad/lazy/gross.

I have a recipe that was shared on one of the gastric bypass lists that

is for a sugar free fudge. It uses cream cheese for body. Here it is:

Recipe By :

Serving Size : 16

Preparation Time :

Categories :

Amount Measure Ingredient -- Preparation Method

-------- ------------ ------------

--------------------

16 ounces cream cheese -- softened

2 ounces unsweetened chocolate squares -- melted and cooled

1/2 cup Splenda granular

1 teaspoon vanilla

1/2 cup chopped pecans

In a small bow, beat the cream cheese, chocolate, sweetener and

vanilla

until smooth. Stir in pecans. Drop onto plate in truffle size pieces

OR

pour into a square baking pan lined with foil, cover & refrigerate

overnight then cut into 16 squares. Refrigerate and use within a

week or so.

For variety, add any or all of the following:

Instant coffee (for a mocha taste)

Shredded unsweetened coconut (to taste)

Peanut butter

Or substitute some of the splenda with SF syrups. Peppermint is my

favorite!

I have not tried making this, so no personal references/comments, but

thought I'd pass it on since you asked!
