Guest guest
Hi Jo, I've never made my own kefir though I know back when I found out about it there were lots of people that had recipes and home kits. I just buy the Helios (?) brand as that was recommended as the best - get it from my health food store and they have many flavors (I love vanilla). I really like it and if you like yogurt, you'll like it too. Let us know if you try this kit and how you like it. I just couldn't " be bothered " with making my own - so much easier to pick one up a the health food store as I'm the only one in my family who will touch it! You might want to buy some (if you can find it locally - cost around $3 or $4) just to see if you like it before spending the money and time making your own. They have it in the grocery here, but not the Helios brand and that was what I read was the best so I go to my health food store for it. Sandy Kefir starter Hello all! I have started the Four Corners Diet and I like it very much. One of the pharmafoods they suggest is Kefir, a cultured milk drink. This sounds appealing to me as one who likes plain yogurt and buttermilk. I found a website that has a dehydrated starter at http://www.lifeway.net/product/starter_desc.php and I wonder if this is is real deal or what. Maybe Gretchen or someone else who uses this WOE can tell me before I order it. Thanks, Jo in MN
Guest guest
Thanks, Sandy, I think I will order it. My hometown HFS is Pill City, without much in the way of refrigerated foods, and I have never seen it at my grocery store. (I live in a small town of 6,000), so I will order on-line. I am a retired person and don't mind home-making things (in fact I prefer it!) I will report back! Guest guest
Jo, Look forward to hearing how it turns out. Since being diagnosed I haven't actually bought any - wonder if there are sugars in the one I used to get - might not even be able to use it anymore. Do you know if there are alot of carbs in Kefir? Guest guest
In the Four Corners diet book, plain Kefir and plain yogurt have the same nutrient analysis, with 11 grams of carbs. The diet recommends at least one cup of kefir or yogurt per day. I like plain yogurt, but I am just curious enough to want to try the kefir, too. I have lost three pounds in the five days I have followed the Four Corners, and more importantly, my BS is at a great level. I have been able to cut down the amount of insulin I am using and hope to be able to cut it back even further as I go on with this way of eating. Its a very comfortable eat-style for me. For instance, two hours after eating a very filling lunch, my blood sugar is 95, and it most often averaged 130-150 before. I was eating quite a bit of low carb bread, which I am no longer doing. If you are interested at all, I saw some of the Four Corners books on ebay at a great price. Jo Re: Kefir starter > Jo, > > Look forward to hearing how it turns out. Guest guest
I make my own yogurt using as a started whatever brand of yogurt I happen to like. I made some kefir once, starting with a commercial culture, but didn't have very good luck with it. It eventually turned into just yogurt. I think it's healthier, and it contains yeasts. The yeasts grow at a cooler temperature, so if it gets too warm the bacteria take over. Gretchen

Guest guest
OK, I got the 11 grams of carbs, but I didn't get the asterisk, that said: " The computer calculates the carbs without taking into account the fact that the bacteria in the yogurt break down most of the lactose into lactic acid. Numbers in parenthese represent the corrected carb count. " Which is 4, and you are correct, of course! Guest guest
Hi Sandy, Like so many things, it seems to depend on the kefir. I buy Lifeway Organic Lowfat Kefir which has 8 grams of carb per 8 oz glass. it contains cultured lowfat milk, nonfat milk and guar gum (which gives it a nice mouthfeel). I find this brand in the supermarket. Be careful if you decide to try it, because Lifeway also makes kefir that's full of sugar with more than double the carbs. Guest guest
Thanks Diane, I'll have to check it out again - it is a healthy drink. Guest guest
Hi Jo, Kefir is very easy to make - it practically makes itself. If you google Dom's Kefir, all of the instructions are there. I only looks overwhelming. You can get starter from Dom. I don't know the cost as a friend sent me my first starter. I've not kept it going well enough to be able to send any out. :-(
