Guest guest
> 1)how do you look for gluten on nutritional labels? In the US the FDA labeling act went into force in 2006 and it requires that any of the 8 major protein allergens (of which wheat/gluten is one) be listed on the label if the product contains them. So you are looking for anything containing wheat, rye or barley or containing triticum ... which is an ancient form of wheat. Watch for mystery ingredients like caramel color, natural flavors, or hydrogenated vegetable protein. Dining in restaurants is easy too - check out Triumphdining.com for a listing of gluten free friendly restaurants. > i dont eat bread anyway, but i do love salads, and i used to love steel cut oats, and would like to have it again. i love nuts, seeds, peanut butter, almond butter, cheeses, cream cheese, deli meat, eggs, apples, veggies, steak, salmon, pork, my dads bbq chicken. > 2)would i have to cut any of these things out? Deli meat can some times have wheat, but generally I haven't had a problem with it. Some barbecue sauces have wheat starch to thicken them, so I would check those carefully. Watch for rubs or marinates on the meat or fish, and obviously no croutons on the salad - otherwise, your overall diet is very gluten-free-friendly
