Do you eat it on pasta or on something >else? certainly! parsley pesto is simply 2 cups of chopped parsley, 2 large cloves of garlic, and 2 tbsp of olive oil - dump in a food processor and voila! i spread it on toasted ww sourdough bread or mix it with shredded cucumber with several dashes of red wine vinegar. i'm not a ww pasta fan. >PS. How do you dry the fresh parsley? I lost 2.5 of the 4.5 pounds. that's great news!! drying fresh parsley is very easy if you have a gas stove; a bit more difficult if you have an electric stove. ann, i think you have electric, right? my mother made drying racks by using clean window screens cut and stapled to wooden racks built to fit the oven. you can purchase drying racks at reasonable prices as well. they're usually wire screens tacked to wood. you spread the chopped herbal product over the screen very loosely. if you have a gas stove, you just plunk the screens in there - no more than one per oven rack - and wait. the pilot light generates enough heat and airflow to make it work. if you have an electric oven, you're supposed to turn the heat on low for 20 minutes first, then turn off the heat, leave the oven cracked open for 5 minutes, and THEN put the drying racks in there for an hour. repeat every hour. Is one cup a day ok? one cup a day is certainly okay. you can drink up to 3 without ill effects. best way to do it is to put a tsp of fresh dried parsley (not the kind you get in your store's spice rack) into a tea ball, pour just-boiled water over it, and let steep for 5-6 minutes.
