Bean Cake

Ok folks, I tried the Bean Cake last night. My boyfriend made it. I wasn't

sure if it was going to be good or not, but I actually liked it quite a bit.

It's no regular cake or anything, but it was nice and moist, and made me feel

like I was being " bad " by eating cake - even though it really wasn't all that

bad. Now when I asked my boyfriend if he liked it, he scrunched up his face.

Since it was Halloween last night my sisters came by with their kids, and even

though they're not doing the SB diet, I asked them to try a piece so I could see

what they thought. They both said they liked it. My mom aslo tried it and

liked it and asked me for the recipe. (My dad is diabetic, so I suppose it

would be a nice treat for him to be able to have cake.) She said it wasn't as

sweet as a regular cake, but that she liked it quite a bit. I also had a

co-worker try a piece (he's a bit of a health nut, but had never tried anything

like that). He was totally amazed. He said it was a little

bland, but certainly not bad and totally edible.

So overall the response was good and just about everyone liked it. And it

looked like regular cake. A tad darker on the top - but a lighter shade of

brown on the inside. And texture wise it was just like regular cake, too.

Maybe a tad moister and it held together better. (Not as crumbly.)

So for anyone that is hesitant on trying the bean cake, I say go for it! :)
