Guest guest Posted December 12, 2005 Report Share Posted December 12, 2005 Goulash w/ ground turkey and Quinoa (keenwah) 1 pound ground turkey 2 T olive oil 1 onion, chopped 5 cloves of garlic, peeled and chopped 1/2 jar tomato sauce 1 cup red wine 2 T chopped fresh oregano 2 T chopped fresh parsley zest of 1 orange 2 T paprika kosher salt and pepper to taste 1 cup quinoa 2 cups stock 2 tablespoons olive oil salt Sauté turkey, onion and garlic in olive oil until browned. Add paprika and sauté for a few minutes. Add wine and tomato sauce. Cover and cook for 20 minutes. Add parsley, oregano and orange. Season to taste. Serve over quinoa. Quinoa is an ancient Peruvian grain. Rich in protein, iron, potassium and lysine it is often referred to as a super grain. When it is cooked a little spiral will show up in the center of the grain. Rinse before using in cold water to remove the saponin on it to ensure a sweet taste as opposed to a soapy taste. Bring stock to a boil and add salt to your taste. Add quinoa and bring to a boil. Lower the heat and cook for 12 to 15 minutes. Most of the water will be absorbed and the spiral will be visible in the center. Remove from heat and let stand 5 minutes. Toss with olive oil and serve under the Goulash. For a nice salad, mix cooled quinoa with chopped tomatoes, basil and lemon peel and juice. Add some olive oil or pesto to coat and toss with some fresh grated parmesan cheese. feel free to at to any recipe file you'd like......I have not tired this one yet, it to came from eat healthy at the farmers a market....didn't get a chance to sample this one .. as it was all gone...
