Guest guest Posted November 20, 2005 Report Share Posted November 20, 2005 Sweet Potatoes au Gratin #2 serves 8 - 10 4 lg (about 3.5 lbs) sweet potatoes, peeled and sliced into 1/8 " thick rounds 1 lg onion, thinly sliced into rounds 3 Tbsp butter, divided 1/2 tsp salt 1/8 tsp freshly ground pepper 3/4 c milk 1/2 c grated Cheddar cheese cooking spray Heat oven to 350 degrees. Spray a 13x9-inch glass baking dish and set aside. Place sweet potatoes in a large bowl filled with ice water to cover to prevent browning. Separate onion slices into rings. Pat potatoes dry with paper towels, then place a single layer on bottom of prepared dish. Top with a layer of onion slices, then dot with half of the butter. Repeat with alternating layers of potatoes and onion until the potatoes reach the top of the dish. Sprinkle with salt and pepper, then pour milk over top and dot with remaining butter. Cover with foil and bake 45 minutes. Remove foil, sprinkle potatoes with cheese and bake, uncovered, until potatoes brown and cheese is melted, about 15 minutes more. Nutritional info/serving: 195 calories, 6.5 g total fat, 4 g saturated fat, 18 mg cholesterol, 211 mg sodium, 31 g carbohydrates, 4 g protein, 94 mg calcium, 4 g fiber.
