Frustration is rising here!

I have to say I'm very frustrated. I put my husband on this diet 2 weeks

ago because his triclycerides are so high that it's driving his cholesterol

and glucose levels up. The doctor recommended this diet highly. My

frustration lies in the fact that we have 6 kids who are rail thin and

really need the carbs so I'm cooking 2 dinners and trying to pack 7 lunches

without a clue as to what to pack for my husband. He used to just grab a

couple Diet Cokes and a granola bar for breakfast and have some pretzils or

eat out for lunch.

I'm thinking I'm doing the right thing when I give him something only to

find out it's on the no no list for Phase 1. I thought he could have

fat-free, sugar-free ice cream. I haven't made the pudding but have made

the jello. So I'm OK there. Can he have the no-fat, sugar-free whipped

topping? I'm lost here. The poor man, I'm sure, is starving. I need

something that's not only family/kid friendly to fix for all of us or some

really quick and easy meals I can throw together for him when we have our

pasta, etc. dishes. I don't want to drive him crazy with this then he'll go

over the edge when he's out of my control, so to speak. We are a busy

family and these time consuming meals are killing me. Many of my old

recipes I can adjust to meet his needs but some, that the kids love and eat

well, I can't. Any ideas and suggestions. I've read both books and am

finding the recipes very labor intensive and most evenings I simply don't

have the time or ingredients for most of them.

I'm also in dire need of some quick an easy snacky things for him. He

doesn't seem to be losing the weight that I'm hearing and reading others

losing so I must be really screwing this whole thing up.

Any help, ideas or suggestions for quick and really easy things would be

greatly appreciated.
