Guest guest Posted July 6, 2004 Report Share Posted July 6, 2004 This recipe was sent from Judy, She has a note on the bottom, Might want to read it ;-) Hugs, marilyn MOCK SPLIT PEA SOUP 3 Cups sliced zucchini 2 Tablespoons instant minced onion 1 Tablespoon parsley flakes 1 cube chicken bouillon 1/2 Cup light cream 1/2 Cup water 2 Tablespoons margarine 2 Tablespoons flour 1/2 teaspoon salt 1 Cup milk 1/8 teaspoon pepper dash cayenne sour cream and paprika optional Combine zucchini, water, onion, parsley, chicken cube, and salt in a sauce pan. Cook until zucchini is tender and only a small amount of water is left. Put in blender and puree In another saucepan: melt margarine, add flour, pepper and salt. Blend well. Add cream and milk and simmer, stiring until thickened. Stir in puree, mixing well, if soup is thicker than you like, add additional milk You may serve this with a spoon of sour cream on each bowl, topped with paprika. A note from Judy, Since there are so many recipes for zucchini, it would be helpful if you would let me know what you would like ie: salads?
