I want to thank you all again for all of your recent kindnesses to me regarding the anniversary of my son's death. Without this list, I probably wouldn't have stuck to this WOE during this most trying time. Anyway, I just wanted to tell you all about the " pizza " I made today. I bought deli sliced pepperoni (about the size of salami or bologna). I put one tbsp. of ready made pizza sauce (Contadina 4C for 1/4 cup) on the lg. pepperoni and topped it off with mozzarella cheese, added a couple of small pepperoni and microwaved for 1-1 1/2 minutes. Let cool a little and enjoy. As close to real pepperoni pizza as I have been able to come since starting this WOL. The only trouble was that I had to make a bunch after my 11 y/o tasted them. Now he is bugging me to make more. I figure they are just a couple of carbs each, depending on how much sauce and cheese you use. Also a really good source of FAT. Hope this helps someone else's pizza cravings. I am still up 3 pounds, but hanging tough. I hope that the increase in fat will break something loose. If not, I will be trying a meat fast, or maybe a fat fast next week. I am a long way from my Thanksgiving goal at this point . Oh, well, just another good excuse not to eat MIL's food .
