Has everyone been watching the recent turning of the tide in the media with Low carb diets? Oprah had a show on Carbohydrate Addict Lifespan Program last Monday! She already has plans for another show this Monday, Oct 11th due to the " overwhelming " response to the show last Monday! 20/20 had a piece on Atkins as well, last Monday nite, in which a very active online member of the Texas Low carb list was interviewed! Wtg, Then, yesterday CNNTalkback has another 1 hour show in which they interviewed Dr. Barry Sears, author of the Zone, one of the author's of Sugarbusters! and Dr. R. Atkins. Congrats to Stu and wife, who are AOL buddies for being interviewed in the audience! We are just excited to see that more people are becoming accepting of this WOE! Who knows, maybe we'll even see more LC products in the market soon As Lia said, " I was low carb, before low carb was cool! " lol. Sorry for the length of a word from Jep... almost finished! Please send them to RNBene@... to be included in the newsletter! Thanks PORK CHOP - GREEN BEAN CASSEROLE From MMooky 6 loin pork chops 1 tbsp. Shortening 1 tsp. salt 1/8 tsp. pepper 2 (10 oz.) pkg. frozen green beans, thawed 1 (10 1/2 oz.) can cream of mushroom soup Dill to season (optional) 1/3 c. milk 1/4 tsp. salt Brown chops in shortening, seasoning with salt and pepper. Mix together beans, soup, milk, salt and dill in a 2-quart baking dish. Arrange chops on top. Cover and bake at 350 degrees for 45 minutes. VARIATION: Instead of celery soup, use cream of celery or cheese soup. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Pumpkin Bars from MMooky Yields 12 pieces. 3/4 cup almond flour 3/4 teaspoon salt 1/2 teaspoon baking soda 1/2 teaspoon nutmeg 1/2 teaspoon cinnamon 2 eggs 1 cup brown sugar twin or splenda 2/3 cup canned pumpkin 1/4 cup cooking oil 1/2 cup nuts In a bowl beat eggs and splenda. Add oil and mix until combined. Then add the dry sifted ingredients together with the pumpkin and nuts. Pour in 1/4 sheet (12 " x 8 " ) greased baking pan. Bake at 350 degrees for 30 minutes. Cool 5 minutes. Remove from pan and frost, if desired. Thursday Night 9-11pm E aol://2719:3-307-iVillage%20Fit%20Chat " >iVillage Fit Chat Hidden Valley Chicken Breasts developed by Elaine Case 4-5 Boneless Chicken Breasts 1 package Hidden Valley Ranch Dressing (Buttermilk) 1/2-1 lb. Bacon 2 cups. Mixed Shredded Cheese (try pepper jack or jalapeno cheese for a zippy flavor) Arrange chicken breasts at bottom of casserole dish. Sprinkle dressing on top. Lay bacon across to cover all and top with cheese. Bake covered at 350 degrees for 45 minutes. Remove foil and bake open for an additional 15 minutes. Cucumber Sour Cream Salad From Dbauer during the chat 3 cucumbers, thinly sliced, 2 tablespoons chopped chives, pepper to taste, 1 cup sour cream, 9 slices bacon, cooked, cooled, and crumbled. Place cucumbers in a bowl. Mix chives, pepper and sour cream together and pour over cucumber slices. DO NOT SALT! Refrigerate for several hours. Just before serving, salt sour cream. cucumber mixture to taste. Pile on torn lettuce leaves & sprinkle with crumbled bacon. Makes 6 servings with approximately 2.6 carbs per serving. HARVEST FESTIVAL PUNCH 1 LITER DIET ORANGE SODA 1 LITER DIET LEMON-LIME SODA 1 LITER DIET STRAWBERRY SODA l LEMON, SLICED THIN 1 CUP HEAVY CREAM MINT SPRIGS IN A PUNCH BOWL, COMBINE THE REMAINING SODAS AND CREAM, STIR AND CHILL WELL. JUST BEFORE SERVING, PEEL THE LATEX GLOVES OFF THE FROZEN HANDS. FLOAT STRAWBERRY SLICES AND ICE-HANDS IN THE PUNCH. YOU COULD ALSO DRAPE SUGAR-FREE GUMMI WORMS OVER THE RIM OF THE PUNCH BOWL (I HAVE THE RECIPE FOR THEM TOO) SHOULD BE ABOUT 28 SERVINGS, SO LESS THAN HALF A GRAM OF CARBS PER SERVING! CHOCOLATE MERINGUES (FROM PEAVINE'S LC WEBPAGE) PREHEAT OVEN TO 225* F 4 EGG WHITES 1 TSP VANILLA 1/8 TH TSP CREAM OF TARTAR 12 PKTS ARTIFICIAL SWEETENER 1 TBSP COCOA (UNSWEETENED) 1. MIX THE ARTIFICIAL SWEETENER WITH THE COCOA AND SET IT ASIDE. 2. IN A METAL BOWL, BEAT TOGETHER 4 EGG WHITES, VANILLA, AND CREAM OF TARTAR UNTIL IT FORMS STIFF PEAKS. 3. ADD SWEETENER/COCOA MIXTURE AND BEAT UNTIL BLENDED. 4. DROP ABOUT 1 TABLESPOONFUL ONTO A COOKIE SHEET COVERED WITH WAXED PAPER. 5. BAKE FOR 1 HOUR AT 225 DEGREES. 6. IF CRISPER MERINGUES ARE DESIRED, TURN OFF THE OVEN AFTER 1 HOUR AND LET THE MERINGUES SIT ANOTHER 30 MINUTES BEFORE REMOVING. TOTAL CARBS: 16 G BREAD PUDDING IS MY FAVORITE " COMFORT FOOD, " BAR NONE. I DEVELOPED THIS RECIPE AFTER MAKING A TASTY THANKSGIVING STUFFING, AND FOUND THAT IT WAS SURPRISINGLY GOOD. DON'T LET THE INGREDIENTS SCARE YOU OFF! 1 3-OZ BAG OF PLAIN FRIED PORK RINDS, LIGHTLY CRUSHED 2 EGGS 1/2 CUP HEAVY CREAM 1/2 CUP WATER 1/4 TO /3 CUP SPLENDA OR OTHER ARTIFICIAL SWEETENER TO TASTE 1 TSP VANILLA CINNAMON MIX TOGETHER CREAM, EGGS, WATER, SWEETENER, VANILLA, AND 1/2 TSP OF CINNAMON. BUTTER A 1 OR 1-1/2 QUART CASSEROLE DISH. PUT THE LIGHTLY CRUSHED PORK RINDS IN THE DISH AND POUR THE LIQUID OVER IT. TURN ON THE OVEN (350*) AND THE LET THE CASSEROLE SIT WHILE IT PREHEATS, AS THE PORK RINDS ABSORB THE LIQUID. SPRINKLE WITH CINNAMON. BAKE FOR 30-40 MINUTES OR UNTIL THE TOP IS LIGHTLY BROWNED. TASTES BEST WARM. VARIATIONS: FOR A FRUITY FLAVOR, REPLACE SOME OF THE SWEETENER WITH SUGAR-FREE JELLO POWDER), FOR MOCHA BREAD PUDDING, SUBSTITUTE BREWED COFFEE FOR THE WATER AND ADD 1/2 TO 1 TSP OF COCOA POWDER TO THE LIQUID. FOR ALMOND BREAD PUDDING, MIX 3 TBSP GROUND OR CHOPPED ALMONDS TO THE MIXTURE AND USE ALMOND EXTRACT INSTEAD OF VANILLA. SUGAR-FREE SYRUPS SUCH AS DAVINCI OR DOLCE CAN BE ADDED AS WELL. LINDA'S ALMOST RICE PUDDING (FATKAT'S LC PAGE ON THE INTERNET) 1 HEAD CAULIFLOWER (16 CARB) 1 C. WATER (0 CARB) 3 C. CREAM (20 CARB) 2 TBSP. VANILLA FLAVORING (0 CARB) 4 EGGS (4 CARB) NUTMEG CINNAMON SWEETENER EQUIVALENT TO 1 C. SUGAR SWEETNESS (8 CARB) CUT THE TOP MOST FLORETS FROM THE CAULIFLOWER, CHOPPING SAME INTO VERY MANY PIECES. PLACE IN POT WITH 1 C. WATER AND COOK ON HIGH FOR 10 MINUTES. IN A BOWL, COMBINE CREAM, EGGS, AND VANILLA. POUR INTO POT WITH CAULIFLOWER, COOK FOR ANOTHER 10-15 MINUTES ON LOW HEAT; STIR CONSTANTLY. REMOVE FROM HEAT, STIR IN NUTMEG, CINNAMON, AND SWEETENER. COOL BEFORE SERVING. SERVE WITH DOLLOP OF WHIPPED CREAM. SERVINGS: 10 CARBOHYDRATES/SERVING: 5 CABBAGE AND SOUR CREAM (FROM FATKAT) 3 TBSP. BUTTER 1 SMALL HEAD CABBAGE, SHREDDED 1 SMALL ONION, MINCED 1/2 TSP. SALT 1/4 TSP. PAPRIKA 1 C. SOUR CREAM IN A LARGE, HEAVY SKILLET, MELT BUTTER. ADD CABBAGE AND ONION. SAUTE FOR 5 MINUTES. SEASON WITH SALT AND PAPRIKA. BUTTER A SHALLOW BAKING PAN. SPOON IN VEGETABLES. TOP WITH SOUR CREAM. BAKE FOR 25 MINUTES IN 375`F. OVEN. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ EXERWISE By Janelle This week, I viewed and executed the Body Flex video program. This breathing and stretching program has come up as a topic on the boards many times. These videos are interesting, in that many with handicaps can safely participate. I believe anyone could benefit somewhat by doing these exercises daily. The breathing techniques seem somewhat bizarre at first. After trying it, I could feel the benefits of expelling the breath while holding the stretches. Let me begin by mentioning there is no running or jumping involved in this program. You will not become overheated, and it does not require a great deal of coordination. The instructional video guides you through the breathing techniques mentioned above. The actual workout video is only 18 minutes long. Once you're familiar with the stretches used, it would not be necessary to use the tapes. It would also be easy to modify the stretches, eliminate some, or add others. I would personally prefer to use my own music. The stretches are held only 8 seconds on the tapes. I would recommend increasing that time, as you get more comfortable. The stretches used are very standard, with the exception of the facial and neck stretches demonstrated. These look very funny, but are good stretches to use. (e.g., sticking your tongue out, while looking up provides a very entertaining stretch)! The instructor is very Barbie Doll-looking, so I secretly enjoyed watching her face contort! The premise of holding your breath while stretching provides an area of stress, causing oxygenated blood to rush to these areas. No equipment is used, as these stretches are isometric and isotonic. I question some of the claims, such as dissolving cellulite is as simple as doing hamstring stretches. I believe you will tone the underlying muscle, but must lose fat overall to see them! The more muscle built, the better the fat burns. I liked the abdominal involvement in each stretch. Simply keeping the abdominals tightened throughout the day is a good idea. It is recommended that one does the program on an empty stomach. I agree-remember my article about Human Growth Hormone? The stretches do not require you to be Gumby. The only difficult stretch is the Butterfly, for the inner thighs. There are alternative positions to target these muscles if you find this difficult. Such options are not provided on the tapes. Some people on the boards report success using this program. I certainly cannot fairly judge any program without trying it myself long-term. I believe these tapes are worth checking out, especially if you have special conditions preventing you from exercise. Have a fantastic week-make it even better by exercising!
