Guest guest Posted October 27, 1999 Report Share Posted October 27, 1999 Hi Penny - No Secret! I always eat 2 eggs and 3 pieces of bacon or sausage for breakfast. (My DH is not as enthused about eggs as I am, so I sometimes make him Dr. Atkins custard (flan) from his DANDR book. Lunch for me: slices of ham or salami or turkey wrapped around a pickled green bean or pickled asparagus. I sometimes spread with cream cheese before adding the veg. I sometimes fry a small steak or hamburger. We always keep our garage freezer filled with beef. We buy half a beef at a time - lots of hamburger and steaks. Lunch for DH : 2 wasa crackers, can of tuna, mayo, diet soda, sometimes a salad of greens to put the tuna on. (I pack his lunch every day) Snacks - celery/small amt of p-butter or cream cheese, or jerky (make my own - get migraines from MSG), bacon rinds with clam dip made with can of clams, sourcream, cream cheese, Worcestershire, parsley and Tabasco. Keeps in the fridge for the week! Dinner: this varies alot! Always some kind of meat - either pork, beef, chicken. Tonight I'm " breading " chicken with almond flour and frying in butter. I make " gravy " by adding cream to my drippings and reduce. I'll also make " caulitators " (my kids love them with the gravy). Last night we had meatloaf - I lighten up the hamburger with crushed pork rinds instead of bread crumbs. We also like " hot wings " dipped in blue cheese - (we don't always use wings - any chicken pieces will work). We make " pizza " with hamburger on the bottom for " crust " . Loaded with lots of pepperoni or sausage! Lots of cheese! I really love this woe! Kay Penny wrote: Kay, Can you post some menus and tell us what you are doing right!! Whats the secret!!!???
