Have you tried the pancakes for breakfast? We made them and they taste

great! They are very thin, like a crape, and very light, but we were very

satisfied with them. You do have to cook them a little slower than regular

pancakes so they get done all the way through tho.

Pancakes

2 eggs, separated

4 oz cream cheese, room temperature

1T artificial sweetener (any heat-stable AS should work)

Beat egg yolks and cream cheese together until smooth. Beat in AS. In

separate bowl, beat egg whites until stiff but not dry. Gently fold into

cheese mixture. Fry in a frying pan with butter. They look like real

pancakes, but they taste even better! And they don't have that eggy taste

that most bread substitutes have. Sometimes, I even add a splash of vanilla

to the batter. Tastes like cheesecake!
