(Not sure exactly where it got its name, as it IS baked, but anyhow...) " Not baked mac and cheese " 1 1/2# ground beef (0) 1 can condensed cream of mushroom soup (4.8*) 3 cups cauliflower (14.4) 1/3 cup mayo 1 large can mushroom slices (5.2**) 1/4 cup diced onion (4.2) 1/4 cup butter 8 oz. shredded cheddar cheese (3.2) paprika, salt and pepper to taste Brown hamburger. Drain and season, then set aside. Boil cauliflower until tender. Drain and set aside. Saute mushrooms and onions in butter until tender and onions are transparent. In large bowl, wisk soup, mayo and cheese. Mix in mushroom and onion mix (without draining it) Gently mix in hamburger and cauliflower. Put in casserole dish, sprinkle with paprika and bake for 30 minutes @ 375 or until heated through and bubbly. Makes 4 main dish servings @ 7.5 carbs or 8 side dish servings. * I could not find soup with less than 9 carbs ** I used fresh sliced mushrooms Enjoy!!!
