Caroline, a low carbing registered dietitian created all of these recipes so that she could have a legal meal, but be satisfied with a few legal treats as well. (Yes, this is Caroline, of the Caroline's Low carb shake fame!) Be sure to check this out for ideas! Jep RECIPE CORNER For the holidays: Bacon Pecans From Nbist 2 Cups pecans 6 strips bacon, chopped 2 T butter, melted Sweetener- about 2 packets (or to taste) Salt Preheat oven to 350. Place pecans in baking dish (I use jellyroll pan or quiche pan). Drizzle with melted butter and stir in chopped bacon. Bake for 20-30 minutes, stirring about every 10 minutes, until bacon is cooked and pecans are toasted. Remove from oven and sprinkle with salt and sweetener. Store leftovers in fridge. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Here's a recipe for you: Peperoni cups **Note, my apologies to the person who sent this! I accidently deleted your email before I got your name. Please send your cheese question to me again ** 1 8 oz. pkg. cream cheese, softened 1 cup mozzerella cheese 1 cup parmesan cheese (grated) 1 box frozen spinach, thawed and drained (squeeze out as much water as you can) 1/2 of a 10 oz. can of water chestnuts, diced (can leave out, but they add a nice crunch) 2 pkgs. large pepperoni (approx. 48, 3-inch dia.) Mix filling and put a teaspoonful on each pepperoni, shaping into a cup and placing into a mini-muffin pan. Bake for 20 minutes at 350~. Makes 48 appetizers at less than 1 carb. each! We've simplified it to just a slice of pepperoni and a cube of whatever cheese we have on hand (cojack, cheddar etc)and maybe a dash of italian seasonings in the mini muffin tin and pop it in the toaster over for a few minutes. You have a great snack or side dish. Tips: Use the deli peppeoni sliced #1 (as thin as they can go)- it's larger and gives you a better cup shape. Use newspaper covered plates to serve (or at least for a few minutes before serving) - these suckers are *greasy*. Let them sit for a few minutes before removing them to a plate- the cheese is gooey and the cups hold their shape better when slightly cooled before removing from the muffin tin. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ /Lvnrsg's Holiday Beef Log/Stick 5 lbs Ground Chuck (or ground beef, if you prefer) 3 tbsp salt (I use Morton's Tender Quick) 2 1/2 tsp mustard seed 2 1/2 tsp garlic powder 2 1/2 tsp black pepper (I used coarse ground) 2 1/2 tbsp hickory-flavored sauce -Mix all ingredients in a lg bowl with tight fitting lid and refrigerate -Stir once a day for 3days -On 4th day mix and roll into 5 logs not over 2 inches in diameter (I can usually get 6 logs ) -Bake in lg roaster pan with rack in bottom of pan (to avoid sticking and keep logs out of fat) -Bake @ 200* for 4 hrs -Turn logs over on rack and bake 4hrs more -Cool, then individually wrap for gifts, or to freeze. In freezer, will keep up to 3 months, thaw in refrigerator, then slice/serve with favorite cheeses, dips, crackers (wasa crackers for us Low-Carbers , salads, pizza, or any other creations you decide upon. Not your usual Hickory Farms Beef Stick...But pretty dog gone close and at a fraction of the cost! ENJOY!!! and Happy Holidays!! ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ The best vension jerky recipe ever! 3 lbs. Venison 1/4 c. Liquid Smoke 1/2 c. Soy Sauce 1/2 c. Worchestershire Sauce 1/2 tsp. Cayenne Pepper 1 tsp. Accent meat tenderizer 1 tsp. Garlic Powder 2 tsp. Onion Powder 1/2 c. Warm Water chili pepper seeds, to taste Cut Venison with the grain of the meat, not across the grain, into 4 " long, 1-1/2 " wide, 1/8 " thick strips. Mix all other ingredients and pour over the meat. Mix with hands to ensure that each piece of meat has been covered by the marinade. Mix ingredients together well and soak meat in it for 24 hours (a zip lock bag works great In my dehydrator, it takes approximately 6-11 hours, depending on how dry (hard) you want the jerky, yours may vary. The jerky should be dry but not brittle. Substitutions that can be used: Beef, Chicken, Turkey ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Cabbage Lasagna serves 8 Preheat oven 400* 1 lb ground chuck 1 cup onion, chopped 1/2 green pepper, chopped 1 med head cabbage 1/2 tsp salt 1/8 tsp pepper 1/2 tsp oregano 1 (18ounce) can tomato paste 8 ounces mozzarella cheese, sliced -Saute ground chuck, onion, green pepper until completely cooked. -Boil cabbage until tender then set aside, saving 2 cups of liquid -In sauce pan, combine 2 cups liquid, oregano, tomato paste, salt and pepper and simmer while stirring often. -Add meat mixture to sauce pan, simmer and stir often -Using a 9x13 pan, layer cabbage, tomato mixture (repeating layers with cabbage/tomato mixture, until the last layer showing on top is the tomato mixture) -Top with mozzarella cheese slices as your very last layer only -Bake @ 400* until cheese is browned, approx 30min ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ **Thanks to LVN for all of the great recipes! Cauliflower Salad I head of cauliflower l lb of bacon l pack of cheddar cheese (2 cups) Mix the above in large bowl and ref. over night. Mix the following in small bowl and ref. over night. l cup mayo 2 tablespoon splenda 2 tablespoon lemon juice l small onion chopped. I usually observe attendance at the gym drop dramatically, then after New Years Day, the gum is packed beyond capacity. Packed with people who wish they had done some exercise to counteract the eggnogs and cookies consumed the past month. I just shake my head, knowing the majority of these people will disappear in a month. As for me? I will feel fit and strong, ready for the new Millennium. I hope to enter the new year with even more strength and stamina. I am encouraging all of you to psyche yourselves NOW. Defy the traditions of eating sugary foods and revolving your lives around parties and shopping. Forget the all-or-nothing mentality about exercise. Set realistic plans to do a little bit on most days. While everyone else runs around like maniacs, know that you are releasing your holiday stress in the best possible way, and can enjoy the season to its fullest! Good news; studies have indicated that you can cut back on your exercise routine for 4-6 six weeks without losing the benefits you have gained previously.
