Pancakes***

2 eggs, separated

4 oz cream cheese, room temperature

1T artificial sweetener (any heat-stable AS should work)

Beat egg yolks and cream cheese together until smooth. Beat in AS. In

separate bowl, beat egg whites until stiff but not dry. Gently fold into

cheese mixture. Fry in a frying pan with butter. They look like real

pancakes, but they taste even better! And they don't have that eggy taste

that most bread substitutes have. Sometimes, I even add a splash of vanilla

to the batter. Tastes like cheesecake!

Mix Maple Flavor with butter/marg. & sweetener , use on pancakes. DELICIOUS!

Cream Cheese Crepes ***

1 8oz block philly cream chees (8c)... soften

3 eggs

1 tsp. vanilla

1 Tblsp soy powder/ or flour I used soy powder

* wonder if I can use the Atkins or another choc./van. shake mix... will

have to try and let you know..

3 tsp equiv. AS

Mix together and fry in butter (I use oil - cant stand butter frying)

Filling:

1/2 c ricotta cheese (4c)

1 koolaid unsweetened Wildberry tea (use A LITTLE- it goes a loooong way) to

taste - sweetener to taste I used 3 pk SUgar twin OH... and I didn't have

ricotta cheese so i mixed 50/50 sour cream and creamcheese..

---Make 12 to 14 small pancakes. use butter to grease the grill.

Put all ingredients in blender and blend til smooth. Cook on pancake

griddle just like " Betty Crocker "

2 eggs,

1/2 cup cottage cheese,

1 tbsp protien powder, 1

tbsp. Just Whites

powdered egg whites),

1 tbsp oat bran or wheat bran,

1/2 tsp vanilla, dash

of nutmeg.
