Cinnamon pork rinds

Tina, I think you are the one who has asked about the cinnamon recipe and I am

not sure if this is what you're thinking about but it sounds good.

1 3 0z bag of plain pork rinds, lightly crushed

2 eggs

1/2 cup of heavy cream

1/2 cup of water

1/4 to 1/3 cup of splenda or other artifical sweetener to taste

1 Tsp vanilla

1 Tsp cinnamon

Mix together cream, eggs, water, sweetener, vanilla & 1/2 tsp of cinnamon.

Butter a 1 or 1-1/2 quart casserole dish. Put the lightly crushed pork rinds in

the dish and pour the liquid over it. Turn on the over (350*) and let the

casserole sit while it preheats, as the pork rinds absorb the liquid. Sprinkle

with remaining cinnamon. Bake ofr 30-40 minutes or until the top is lightly

browned. Tastes best warm.

Ok, I finally weighed yesterday am after the cheating weekend. TOM hasn't come

yet either, but regardless I am up 3 lbs. : ( I might have to change my

Tgiving goal, but I will wait and see what happens after TOM leaves.
