Since it seems like most of us have experienced a blast of colder weather, I just wanted to share a hot chocolate recipe from the Atkins Cookbook. I made some last night and it was YUMMY!! Very rich and creamy. Here it is: Hot Chocolate 1/3 cup cream 2/3 cup water 1 teaspoon unsweetened cocoa (I used Hershey's cocoa powder) 1 packet sugar substitute (I used Stevia) 1/2 teaspoon vanilla (I used Butter Rum extract for a great flavor!) Place all ingredients in saucepan (or microwave). Heat through, but do not boil. Stir constantly. Makes one serving with 5.4 total grams of carbs.
