These carb counts may be helpful to all of you. All are for cooked 1/2 cup

servings

Vegetable Total Carb Fiber Net Carb

Potato 15.6 1.4 14.2

Celery Root 7.2 1.4 5.8

Cauliflower 2.6 1.7 .9'

Spagetti Squash 5.0 1.1 3.9

I cut Spagetti Squash in half and and clean out seeds, put cut side down in

a pan cover with plastic wrap and microwave until fork tender. then I cool

and scoop serving size portions into zip lock bags and freeze. Since squash

spoils quickly after it is cut this makes it easier for me. I can't eat

cauliflower as my gut doesn't like it. Celery Root also known as celeriac

is great. It looks ugly on the outside but is creamy white on the inside.

Very mild celery flavor and great to use in place of potatoes as follows.

Clean and cube simmer in water until tender. You can then drain and stir in

sour cream and seasonings. Add to stews or soups same as potatoes. Shred

and use raw in salads. There is a recipe in Atkins quick and easy for

salad.

I get Diet RC at Fred Meyer here on the west coast. Safeway doesn't carry

it. Fred Meyer is owned by Kroegers. Splenda is great. The cheapest place

it buy it is from Splenda.com. Synergydiet.com has some awesome candy and

jam made with splenda. Log Cabin Diet Syrup is now made with Splenda as is

Lite Style Ocean Spray Juices. I know some of these have too many carbs for

LC but are very useful for diabetics not needing to loose weight.

We have sunshine today after 1 1/2 days of rain. I am on the central Oregon

coast about 2 miles in from the ocean.
