Mollie,

Well, I finally have something to contribute! I don't post often but is

sure enjoy everyone's input.

I spent three years in Greece. My husband was in the Navy at the time. It

was a wonderful time, oh do they do food great! Everything is made fresh,

and if it isn't in season you just don't get it. Very healthy.

In Greece they call this sauce Tziki. It got the gyro sauce name because

of the sandwich they put it on.

Greek Tziki (Gyro Sauce)

16oz. yogurt

1 cucumber, peeled, de-seeded, chopped small (approx. 1/2 " pieces)

2-5 garlic cloves, minced fine (depends on how strong you want it)

This is the basic receipe. The key is to let it sit in fridge overnight.

This makes the garlic really permeat the sauce. And the garlic does get

stronger overnight.

In Greece they only have whole milk yogurt. None of this low or non-fat

stuff. OHHHHH what a difference it makes! You can get whole milk yogurt

at some health food stores.

You can also substitute SOUR CREAM for the yogurt, but it is not the same.

Some Greek restaurants (known as tavernas there) add the following:

salt to taste

drisled with olive oil

shredded cucumbers instead of chopped

even onion

In Greece this is the only sauce you get. No ketchup, no butter, no

cocktail sauce (for shrimp), no steak sauce--nothing. So you really get

use to it and get an appreciation for the different receipes. Some of them

and the amount of garlic they use will knock you over!

Oh, the only other choice you have is lemon wedges. Try squeezing lemon

juice over your next pork steak or chop. Mmmmmmmm! Or over fresh steamed

green beans! ooooo baby! Hey, I think I'm getting hungry!

I haven't done any carb counts on it all, sorry. I'm sure it's not too

hard to figure.
