Braised Cucumbers

Makes 4 servings

3 medium cucumbers, pared, seeded and cut

into 2 " x 1/2 " sticks

1/2 cup low-sodium chicken broth or

vegetable broth

2 teaspoons chopped fresh dill or 1/2

teaspoon dried

1/2 teaspoon salt

In medium skillet, combine cucumbers and

broth; cook over medium heat, stirring

frequently, 12 minutes, just until tender.

Add dill and salt; stir to combine.

EACH SERVING (1 CUP) PROVIDES: 1 1/2

Vegetables, 5 Optional Calories
