Pam Snowballs Cookies recipe SNOWBALLS 2 Cups safe flour (I use all purpose) 3/4 teaspoon salt 1 cup (2 sticks) butter or safe margarine 1/2 cup granulated sugar 1 tablespoon Vanilla extract 3/4 cup powdered sugar 1. Preheat oven to 325 degrees F. Butter 2 baking sheets. In a small bowl, combine flour and salt. In a medium size bowl, with an electric mixer on high, cream the butter and granulated sugar until light and fluffy, blend in Vanilla 2. Using a spoon, stir in the flour mixture. Dust your hands with a little of the confectioners sugar and roll the dough into 1 inch balls. Place 2 inches apart on the baking sheets and bake for 25 minutes or just until light brown. Transfer to racks to cool for 15 minutes, then roll in the powdered sugar. These cookies keep well in an airtight container for up to 2 weeks.; do not freeze them. Makes about 3 dozen cookies. For more, double the recipe *** I made a peppermint snowball to try out for Christmas. I used 3/4 tablespoon of Vanilla extract and 1/4 tablespoon of the Peppermint extract in place of the 1 Tablespoon of Vanilla in the recipe.They were really good and many asked for the recipe. I am next going to try to do 3/4 vanilla and 1/4 lemon extract to see how they come out. These are very yummy cookies!!!! This recipe was taken out of Readers Digest Down Home Cooking Cook Book. I will send in more, but I need to start school now.
