Guest guest Posted December 26, 2005 Report Share Posted December 26, 2005 hello, SCD has been a miracle for my 4 yr old, relieving him of much pain and " bringing him back to us " . I totally endorse this healthy way of eating. Sadly, I fear Jack may now have developed allergies to peanuts, almonds, and cashews, as he now gets a runny nose and red, itchy eyes when he eats them. He has been SCD for exactly 1 year. I am at a loss - I don't know how to bake for him, and he just doesn't get satisfied with meat, vegs, and fruit. He eats way too much meat because I don't know what else to feed him. I hate to do it, but need to go back to either rice or potato for baking and satisfying his appetite. Which is more gut-friendly? Is there another " flour " I could use? The nut-free bread was all egg, and was not a hit. Any recommendations or guidance would be greatly appreciated. The recipe was posted few days ago by someone else from this list, and is pasted below: Happy Chanukah To those of you who have been missing their traditional potato latkes, try this. 1 large acorn squash, peeled and grated 1 medium Gala apple, peeled and grated 1 small onion, chopped into small pieces 2 eggs Salt /pepper oil for frying Mix all ingredients very well. Heat oil in frying pan over a medium flame. Place a spoonfull of mixture in hot oil. Fry until golden on both sides. Enjoy! You could try adding cinamon and ground ginger. We have brought this diet here by putting K on it and now I have Dr.'s, nurses, teachers, friends, and NEW acqaintances are asking me how K has progressed here and is being endorsed by K's ped. GI Dr. even. SCD is becoming a well-known healing diet in the middle of New York state. I am trying to print stuff out and pass the site along and such but, there is an explosion of people here that need info. We live about an hour from Albany. Is there anyone else in this area that would be able to help get this info. out? Maoderators have any comments? Thanks. Both rice and potato will foster bacterial overgrowth of the unhealthy bacteria. This is not a choice that I can endorse. Feed these and the " miracle " will disappear. The rule is " symptom " free for an entire year before introducing such foods. If you give rice or potatoes at this point, you will no longer be using SCD. Carol F. In some areas there are SCD cooking demonstrations held. There is enough information on our two web sites to supply plenty of information. Carol F.
