I recently ran out and the new box that arrived Thursday is very fine. Just google Hughson nut. Today I am experimenting with this new almond flour using my Pasteur’s Champagne Yeast, Fructose (also called levulose), and coconut oil to make leavened bread. As I use this Champagne yeast and fructose to make my wines I know that I don’t react. I made this leavened almond flour bread once before but then ran out of almond flour. Also Dr. Haas used levulose and glucose to help some of his hospitalized patients gain back lost weight. I have gained back the 17 lbs I lost plus now I am getting fat. I may have to start eating less or use less of these monosaccharides.
